First prepare a sponge with the flour. In a large bowl, mix together the yeast, warm water, 1/3 cup of honey, and 4 cups flour. Cover and let rest for 20-30 minutes (until doubled in size) in a warm, draft-free place. 2. Add 2.5 more cups flour along with 1/3 cup more honey, the melted butter, or olive oil, and salt. Mix well. Knead for at least 5 minutes. Add the last 1/2 cup flour if dough seems too sticky - 1 Tbsp at a time. Grease bowl, place dough in bowl and cover. Let rise for 30 minutes (until doubled in size) in a warm, draft-free place. 3. Preheat oven to 400º. Spray or butter the pans generously. Punch down the dough to remove air bubbles. Divide evenly and place in greased pans. Cover and let rise until doubled. 4. Place pans inside of the oven when dough is ready. Turn the temperature down to 350º and bake loaves for 30 minutes for large loaves, 25-30 minutes for medium loaves, or 17-18 minutes for minis. Loaves are done when bottom of bread is lightly browned. You can tilt the hot pan just enough to check the bottom. Do not over-bak. 5. When done, immediately remove loaves from pans and place loaves on cooking rack. If desired, brush loaves with butter. We hope you will try this in your own home! xoxo Liz & Lizi In this video: 00:00 Our Famous Kamut Bread from Our Cookbook 01:00 How to Adjust the Water Temperature for the Yeast 02:50 Create a Sponge to Break Down the Gluten 04:08 My Favorite Kitchen Tool for Baking - The Danish Dough Hook 05:06 How to Add the Right Amount of Flour for Bread 07:58 Real French Salt Is Essential for Great Baking 09:38 How to Avoid a Dry Loaf of Bread 11:28 How to Knead Your Bread Dough 14:47 Shaping the Dough into Mini Bread Pans 19:35 How to Know Your Dough is Ready to Bake 20:59 How to Know Your Bread is Done These are a few of our Favorite Products we Share - FOOD NANNY MINI PANS https://www.thefoodnanny.com/products/fn-bread-pan-mini-6-pack?_pos=2&_psq=pans&_ss=e&_v=1.0 THE FOOD NANNY STORE - Our Cookbooks, Kamut Flours, Kitchenware and more https://www.thefoodnanny.com/ My Cookbook with Kamut Breads, Pizza and Many More Recipes: FOR THE LOVE OF KAMUT - by Lizi Heaps https://www.thefoodnanny.com/products/for-the-love-of-kamut BOOK - FOR THE LOVE OF SOURDOUGH - from Food Nanny and Turner Farm https://www.thefoodnanny.com/products/for-the-love-of-sourdough Our Organic Kamut Flour and Baking Mixes https://www.thefoodnanny.com/collections/kamut Easy Kits and Collections to Help You Cook https://www.thefoodnanny.com/collections/kits FREE Meal Plans https://www.thefoodnanny.com/blogs/meal-plans Let us know what you think after you've tried it and follow us on Instagram @thefoodnanny Keep cooking!
