Living in Australia, Keto products on the shelf are limited. So I need to make most things from scratch and that's not a bad thing! So I am going to show you a very simple and delicious sugar free strawberry jam recipe with only 10 calories and 1g carbs per serve.
Ingredients
1kg Strawberries ( fresh or frozen)
20g Powdered Sugar Sweetener
2 Tbsp Chia Seeds (I decided to grind mine)
2Tbsp Lemon Juice
1 Tsp Cinnamon (optional)
2 Tsp Vanilla (optional)
Preparation
Chia seeds can be added whole or you can grind them with a coffee grinder or small blender. If you decide to grind the chia seeds then have this step done in advance.
Wash and sterilise your jars. I soaked mine in soapy, hot water for 5 minutes. Then washed them thoroughly.
If using fresh strawberries, soak them in water to wash away dirt then destem them and add to the pot you will be stewing the jam in.
Instructions
Turn on heat to high and add lemon juice to strawberries. Stir occasionally. Turn down heat to medium to simmer after a few minutes on high. Let simmer for 10 to 15 minutes or until strawberries are softened and their juices have released.
Add sugar sweetener, cinnamon and vanilla and stir. Add Chia seeds and let simmer for 5 minutes. Turn off heat and allow to cool before placing in mason jars.
