How to Make Koupepia: Cypriot Stuffed Vine Leaves FULL

A full length video demonstrating the technique on how to stuff vine leaves, the Cypriot way! With my special guest - my yiayia. Ingredients list below, full recipe in my book Taverna.

Ingredients:

- 2 onions
- 4 tablespoons olive oil
- 500g pork mince
- sea salt
- 5 tomatoes
- 2 tablespoons tomato purée
- 200g medium grain rice
- 1 tablespoon dried mint
- 1⁄2 teaspoon ground cinnamon
- 1⁄2 teaspoon freshly ground black pepper
- 1⁄2 a bunch of flat-leaf parsley
- 50 vine leaves (or you could try filling onions, courgettes, tomatoes and peppers)
- 2 potatoes
- 800ml chicken stock
- 2 lemons
