Hi Friends! Sichuan Spicy Chicken aka La Zi Ji!!! Yes this classic recipe is HERE for our celebration of 10k Subscribers! Thank you guys so much for following along and I am more pumped than ever to share recipes from my hometown Sichuan! Now you can stop ordering this dish for takeout and experience the next level Sichuan MA LA FLAVOR! It's so good! The dry chilies, Sichuan peppercorn, garlic, scallion, just all mixed so well together and creating an incredible aroma! Other than the enormous amount of dry chilies and Sichuan peppercorns we use, this dish is actually very simple! It really reminds me of the name of Chengdu which is "tian fu", meaning "the land of plenty". We use plenty of chilies and Sichuan peppercorns to create this perfect fragrant spicy dish! Such a wonderful way to celebrate!

Ingredients:
3 Chicken thighs
5 green onion
2 cups dry chili (cut and deseeded, not the spicy kinds, choose low heat Sichuan peppers)
2 tbsp Sichuan peppercorn
1 cup cooking oil (for frying and stir fry)
3-4 cloves Garlic (chopped)
1 tbsp roasted sesame seeds
Marinate:
Shaoxing wine 1 tbsp (with sliced scallion and ginger)
Salt 1/4 tsp
light soy sauce 1 tsp
Corn starch 2 tsp
Peppercorn oil 1/4 tsp
Hard liquor for dry chilies: 2 tbsp vodka
Seasoning: 2 tsp light soy sauce (or to taste)
