This super simple, 4 ingredient Lemon Butter (or Curd, for those of you across the pond) is a sweet household winner for all citrus lovers. It’s a great way to use up excess lemons and never lasts long in our house!
You’ll need:
✅ 1 1/2 cups white sugar
✅ 190 grams butter
✅ 190 mls lemon juice (fresh is best)
✅ 6 large eggs
It’s important to continually whisk your mixture as soon as you put it on the heat, to ensure you don’t end up with a lumpy curd.
If you’ve reached half an hour on the heat and you feel like your mix is still very runny, you can try adding a couple more tablespoons of butter. It’s also important to not that your curd will thicken once it cools and the butter in the mix sets.
You can use your lemon butter on toast or crumpets, it’s a great to baking - on top of cupcakes or as a filling in lemon tartlets or even dolloped on top of yogurt and muesli.
