CAKESBYIFE Milky doughnut recipe & 2 milky filling recipes (watch the video for better explanation)
1. Flour: 650g
2. Sugar : 120g (100g for less sweet or 130g if you want it sweeter)
3. Butter/magarine: 65g
4. Eggs - 2
5. Water - 220g
6. Yeast 1 hipped tablespoon
7. Nutmeg - 1/2 tsp
8. Cinnamon- 1/2 tsp (optional)
9. Milk flavour: 1/2tsp
Mix all dry ingredients together & add wet ingredients to dry in a mixer bowl, mix for 20 mins, stop mixer after every 5 minutes to avoid over working it, if you use an industrial mixer you can skip this.
Once doughn is ready after checking for the window test, Measure the whole dough & divided it by 15. Mould dough & place on the floured parchment paper, sprinkle a little flour on the mounded dough & cover with a nylon to rise for 35 mins & 5- 10 extra open, then fry once ready, coat in powdered milk when warm not cold, fill doughnuts when cold.
This recipe makes 15 doughnuts @74g each.

Thick Rich Milky filling ( not too sweet)
1. 50g whipping cream powder
2. 50g cold water
3. Powdered milk - 150g (for a less thicker consistency use 100g)
4. Condensed milk - 200g
Mix all together till it doubles in size & looks off white ( properly mixed about 5mins)

Mixed milk mixed with a hand mixer for 5 minutes till smooth.
