How to Make Pancetta (Italian Bacon)

Video tutorial on how to make Pancetta at home.
Cook (Smoke) Time: None – No cooking with this one.
Time To Make: At least 1 month. I week for salt curing and 3+ weeks of dry curing.
Basic Supplies Needed:
Glass Dish, flat bottom
Parchment Paper
Cheese Cloth
Butchers Tying Twine
Mortar/Pestle or Spice Grinder
Some sort of weight (I use a gallon of milk)
Cool place to hang cure, refrigerator is best.
Basic Ingredients:
Pork Belly – Skin Removed
Cure – Sea Salt, Sugar and Pink Salt (Sodium Nitrate)
Spices – Your choice. For this video – Star Anise, Black Pepper Corn, Coriander, Fennel Seeds
