How to make REAL Lasagna - Step by step homemade recipe

Ciao, I’m Chef Marco! I’m a 27-year-old Italian chef from Abruzzo, born and raised in the heart of Italy. For my very first video, I’ve chosen a true Italian classic: LASAGNA. RECIPE EXPLANATION Step 1. Ragù Bolognese 2 celery stems 1 carrot 2/3 Onions ( Yellow is preferred) 200g (1/2lb) Ground beef 200g (1/2lb) Ground pork (or pancetta) Tomato paste Tomato puree (optional) 1 cup red wine 1 Cup vegetables broth Milk to cover Salt, pepper, nutmeg to taste Step 2. Pasta making You can skip this step and buy premade lasagna sheets. Just read the label carefully and make sure the ingredients list is not endless. 5 eggs 500g ’00’ Flour A pinch of salt ’00’ is the perfect type of flour for pasta making but any other type works, the ratio might change a little. You’re looking for a dough that is smooth, dry and elastic. Step 3. Cheeses 200g fresh mozzarella (optional) 200g Parmigiano Reggiano Bechamel: 1L milk 100g (0.25lb) butter 100g (0.25lb) Flour Salt, nutmeg, pepper to taste Step 4. Assembling Don’t forget to start with a layer of sauce! Cover the first layer with pasta and add: Sauce - Bechamel ( or just mix it together as shown in the video) - mozzarella - parmigiano. Cover again with pasta and repeat until reaching the last layer, don’t for get to cover it with sauce and shaved parmigiano, is gonna give it a nice crispy texture. Bake at 190C (375F) until the top is crispy enough for your taste and you’re done! Is very important letting the lasagna sit for at least 10 minutes before cutting and serving!
