Today, Mrs Crocombe is preparing a light, delicate pudding that's suitable for the nursary or sick room. A staple that every good cook should know how to make, tapioca pudding can be flavoured to suit a child or patient's tastes.

INGREDIENTS
3 tbsp tapioca (small tapioca pearls)
The zest of one lemon in cut slices
1 stick cinnamon (optional)
900ml / 1 ½ uk pints milk
115g / 4oz sugar
3 small eggs
Optional: short crust or rough puff pastry
METHOD
1. Grease a pie dish and, if using pastry, line it with pastry.
2. Mix the tapioca, lemon rind and milk, and simmer for 1¾ hours until thick.
3. Stir in the sugar, allow to cool, and remove the lemon peel.
4. Beat in the eggs, and turn the whole into your pie dish.
5. Bake at 200-220°C for 30 minutes. Serve hot or cold.
