酸梅製作過程
材料:
青竹梅2磅
程序:
1. 青竹梅,加入粗鹽3湯匙,撈勻,醃5分鐘,去除蟲滋及草青味。
2. 清水浸5分鐘。
3. 清水洗乾淨,擎乾水,搣去椗,陽光曬2小時,攤凍。
4. 青竹梅,放在有蓋玻璃密實盒內,放一層梅子,鋪上一層粗鹽,放第二層梅子,再鋪上一層粗鹽,大約用100克粗鹽。
5. 冚好蓋,封好,於陰涼處放好,每隔一段時間,就搖一搖容器。放置大約一年,就可以用了。

2. Soak in tap water for 5 minutes.
3. Rinse thoroughly. Hang dry. Remove anchors. Put under sunlight for 2 hours. Wait for cooling down.
4. Green plums, put in a glass ware with lid. Put a layer of plums, then a layer of cooking salt, the 2nd layer of plums, then a layer of cooking salt again. Totally about 100g of cooking salt will be used.
5. Cover up the lid properly. Put in a cool and dry place. Shake the container for every certain period of time. Place for about 1 year before consumption.
