Ingredients:
4 large eggs
3 cups fresh parsley (chopped)
2 cups fresh cilantro (chopped)
1 cup fresh dill (chopped)
1 small onion (finely chopped)
1/2 cup green onions (chopped)
1/4 cup walnuts (optional, chopped)
1/4 teaspoon turmeric
Salt and pepper to taste
1 tablespoon olive oil (for frying)
1 tablespoon baking powder (optional, for fluffier texture)
Instructions:
Prepare the Herbs:
Wash and chop all the herbs (parsley, cilantro, and dill) finely.
If you're using green onions and walnuts, chop them as well.
Prepare the Egg Mixture:
In a large bowl, crack the eggs and beat them well.
Add turmeric, salt, and pepper. You can also add the baking powder if you want a fluffier texture.
Mix the Herbs:
Add the chopped herbs, green onions, and walnuts (if using) to the egg mixture. Stir everything together until well combined.
Cook the Kuku:
Heat the olive oil in a non-stick frying pan over medium heat.
Pour the herb and egg mixture into the pan. Spread it out evenly.
Cook on low-medium heat for about 10-12 minutes, allowing the bottom to set and turn golden brown. You can cover the pan with a lid to help it cook evenly.
Flip the Kuku:
Once the bottom is golden and the eggs are mostly set, you can flip the kuku. To do this, place a large plate over the pan, flip it, and then slide the kuku back into the pan to cook the other side.
Cook for another 5-7 minutes or until the kuku is fully cooked through and golden brown on both sides.
Serve:
Once cooked, remove from the pan and cut into wedges. Serve warm with flatbread, yogurt, or salad.
