TUO ZAAFI(TZ) is one of Ghana's favourite and popular dish which originated from the Northern part of Ghana. It is mostly paired with either Ayoyo soup,Dried okra soup(kubewa buusheshe) or miyan kuuka soup(baobab leaves) with the touch of authentic tuo zaafi stew. i shared in this video how to make the authentic tuo zaafi from scratch with the original tuo zaafi stew, dried okra soup and miyan kuuka. INGREDIENTS:
Marinated meat with 1 1/2 medium size Onion, 4 cloves garlic, a thumb of ginger and 1/2 tsp aniseed(blended together)
Seasoned with salt, 1 tsp curry powder, 1/2 tsp white pepper, 1/2 tsp black pepper, 1/3 tsp rosemary and 2 bay leaves.
TUO ZAAFI STEW: 5 medium size fresh tomato
400g canned chopped tomato(optional)
A thumb of ginger
4 cloves of garlic
Palm oil
waagashi(optional)
Salt to taste
Stock cube
TUO ZAAFI: 2 1/2 Cups of corn flour
1 1/2 cassava flour
