Huevos Rancheros (Rancher’s Eggs) is a beloved Mexican breakfast dish commonly found in nearly every restaurant throughout deep South Texas, and it also appears on many menus nationwide. The highlight of this recipe is that the Huevos Rancheros are served on top of a tostada smeared with refried beans, then generously topped with my delicious salsa, avocado, and queso fresco. When I'm hosting several guests and short on time, I like to prepare the salsa and refried beans in advance. This way, all I need to do is fry the tostadas and cook multiple eggs on my griddle, allowing me to serve everyone at once. 4 Lrg Roma tomatoes (diced)
1/2 Medium chopped onion
1/4 cup finely chopped cilantro
2 large minced garlic cloves
1/4 tsp ground cumin

2 Serrano peppers (slices)
Refried beans (about 3 1/2 c.)
3 Tbsp bacon grease (for beans)
1/4 - 1/2 C. Water for salsa
