Hyderabad ka mizaaj - Hyd Chicken Biryani
Ingredients:
Oil (तेल) - ½ cup
Cinnamon, 2” stick (दालचीनी) - 1 no
Shahi jeera (शाही जीरा) - 1 tsp
Hamdard Khaalis Cardamom (इलाइची) - 7-8 nos
Onion, sliced (प्याज़) - 2 cups
Chicken with bone (चिकन) - 1½ kg
Salt (नमक) - to taste
Ginger garlic paste (अदरक लहसुन पेस्ट) - 2 tbsp
Green chilli (हरि मिर्च) - 4-5 nos
Mint leaves (पुदीना) - 1 cup
Curd (दही) - 1½ cup
Hamdard Khaalis Turmeric (हल्दी) - 1½ tsp
Hamdard Khaalis Chilli powder (लाल मिर्च पाउडर) - 2 tsp
Hamdard Khaalis Hyderabadi Biryani Masala (बिरयानी मसाला) - 2½ tbsp
Water (पानी) - 3½ cups
For Rice:
Water (पानी) - 3 lts
Salt (नमक) - 3 tbsp
Cardamom (इलाइची) - 4-5 nos
Basmati rice (चावल) - 3 cups
Hamdard Khaalis Saffron (केसर) - a pinch
Hamdard Khaalis Hyderabadi Biryani Masala (बिरयानी मसाला) - 1 tsp
Mint leaves (पुदीना) - handful
Water from Blanched Rice (चावल का पानी) - ½ cup (approx)
Dough (आटा) - for sealing
Fried onion (तला हुआ प्याज़) - handful
