I finally succeeded in making thick soufflé pancakes.
The process of doing it is very healing and makes me full of expectations ~
It was really a sense of accomplishment when I finally made it!
You can try using a pan. It would be better if you have an electronically controlled flat-bottom stove or electric baking pan~
Recipe: Soufflé Pancake
*flavors*
-Cocoa Cream + Peanut Chips + Crisps
-Pistachio Cream + Red Bean
-Plain Cream + Brown Sugar Pearls
~Recipe (available for 6-7 pieces)
*egg yolk paste*
4 Egg yolks (about 60g)
Low gluten flour 65g
Milk 40g
Vegetable oil 12g
*protein*
4 Egg whites (about 140g)
White sugar 50g
Lemon juice 3 drops
1. Mix egg yolk, milk and vegetable oil evenly.
Sift in the low-gluten flour and stir until there are no lumps of dry flour.
2. Add sugar to the egg whites in 3 batches and whisk until dry and foamy.
3. Mix the egg yolk paste with 1/3 of the meringue.
Add the remaining meringue, mix well, and put into a piping bag.
4. Preheat the stove to 160°C and brush the surface with oil.
Pipe the batter onto the stove, each one 8-9cm in diameter.
5. Cover and bake for 4-4.5 minutes, flip over and bake for the same time.
(The steps are the same when using a non-stick pan, just pay attention to the heat)
6. When finished, add your favorite toppings and cream on it.
