I found ten giant roasting pits on this trip!
I also was able to come across some of the agave plants, Agave Utahensis is the plant that these giant pits were built for. The roast would have been a sight to witness, especially hundreds of years ago when everything was done simply by hand with simple tools.
Some of these pits are over twenty feet across, the cook would have consumed lots of resources in an environment that is not resource rich. No doubt, these events probably had a ceremony entwined with the cook!
