Keto banana pudding recipe:
1 quart keto milk (see below)
4 egg yolks
1 T beef gelatin
1 1/4 cup Magic Baker's
1 T banana extract
1 t salt
In a yellow mixing bowl, combine gelatin and some of the keto milk. Beat up and make sure all the lumps and bumps are mostly gone. Whisk egg yolks.
In a medium pot over medium heat, combine the rest of the keto milk, Magic Baker's, and salt together. Whisk together until simmering. Temper yolks like on the video and add back to pot.
Pour the hot mixture a little at a time into the yellow or whatever color bowl and stir really well. Add in Banana Extract and stir well. Let it sit at room temp for minutes and then put in fridge. Let it sit until cool in the fridge and then cover with plastic just like I showed on the video.
Refrigerate for at least 6 or 8 hours, but preferably overnight. When ready to serve, whip with hand mixer or take whatever portion you want to eat out and whip with hand mixer. This makes 4-8 servings depending on how hungry you are. At 4 servings, it should have about 2 g carbs, but use carb manager with the ingredients you are going to use. Whip again if stored in fridge before serving again.
Keto Milk Recipe
3 cups water
1 cup heavy cream
1/8 cup' Magic Baker's or powdered sweetener if you have it
Combine all in quart mason jar and shake well before using. Makes 1 Quart.
