#蜜汁煙燻三文魚 #HoneyGlazedSmokedSalmon #藍帶廚藝 Teresa Mo 毛舜筠官方頻道 Official Channel 健康飲食 • 生活方式 • 工作點滴 請留言,按讚,訂閱同分享 Please Comment, Like, Subscribe, and Share 毛姐蜜汁烤煙燻三文魚 🐟✨ 材料: 1. 三文魚腩 1x500克 2. 檸檬 x1 切片 3. 蒔蘿 切碎 蜜糖醬汁: 1. 蜂蜜 (或亞洛酮糖漿) 1⁄2杯 2. 生油 1湯匙 3. 老抽 1⁄2茶匙 煙燻材料: 1. 黃糖 30克 2. 花椒 幾粒 3. 八角 幾粒 4. 丁香 幾粒 5. 普洱茶葉 1⁄2杯 6. 米 100克 烹調方法: ● 將三文魚洗淨並索乾水份 ● 將它移到牛油紙上 ● 在鍋中用兩張鋁紙蓋好 ● 放入煙燻材料 ● 在上面放一個架子 ● 火爐調至大火 ● 當煙霧出時,將三文魚和牛油紙移到架子上 ● 蓋鍋 ● 煙燻15-20分鐘 ● 預熱焗爐在和鑄鐵鍋至高烤模式 蜜糖醬: ● 在一個小鍋裡混合蜂蜜(或亞洛酮糖漿),生抽和老抽 ● 慢火煮至完全融合 烤焗煙燻三文魚: ● 把蜜糖醬汁塗在三文魚上 ● 焗爐內取出鑄鐵鍋 ● 將煙燻三文魚轉移到鑄鐵鍋上 ● 放入預熱了的焗爐內 ● 繼續用高烤模式烤10分鐘直到變成褐色 ● 把它拿出來, 把蒔蘿洒在魚上 ● 檸檬片裝飾 Mo's Honey Glazed Smoked Salmon With Honey Glaze 🐟✨ Ingredients: 1. Salmon belly 1x500g 2. Lemon 1 3. Finely-chopped dill Honey Glaze: 1. Honey (or Allulose syrup) 1⁄2 cup 2. Soy sauce 1tbsp 3. Dark soy sauce 1⁄2 tsp For the Smoke: 1. Brown Sugar 30g 2. Peppercorns a few 3. Star anise a few 4. Pu-Erh tea leaves 1⁄2 cup 5. Rice 100g Method: ● Wash & dry the salmon belly ● Move it onto a parchment paper ● Cover a wok with double sheets of aluminium paper ● Fill the wok with the prepared smoking mix ● Place a rack on top of it ● Turn the stove to high heat ● Once smoke is visible, move the salmon with the parchment paper onto the rack ● Cover the wok with the lid ● Smoke for 15mins ● Preheat oven to broil mode Honey Glaze: ● Mix the honey (or allulose syrup), soy sauce and dark soy sauce in a small pot ● Let it simmer until well-incorporated Broil the Smoked Salmon: ● Apply honey glaze all over the salmon ● Bring out the heated cast iron pan from the oven ● Transfer the smoked salmon onto the iron cast pan ● Bring it back to the oven ● Broil for 10mins until golden brown ● Take it out and garnish with dill and slices of lemon
