01:20 - Luke's pumpkin pancakes
- 1/3 cup pumpkin puree
- 2 tbsp brown sugar
- 1 egg
- 2 tbsp melted salted butter
- 1 cup milk
- 1 1/4 cup flour
- 2 tsp baking powder
- 1 tbsp pumpkin pie spice
for the cinnamon butter:
- 1 stick salted butter
- 2 tsp maple syrup
- 1/2 tbsp cinnamon
1. Brown butter and stir in the maple syrup, set in fridge till soft.
2. Whip butter with cinnamon and set aside for serving later.
3. Mix pancake and let rest for 15 minutes.
1. Whisk together the dry ingredients and set aside.
2. Whisk together the wet ingredients.
3. Whisk in the dry ingredients and spices gently. Let this rest for at least 15 minutes.
4. Pour 1/4 cup batter into a skillet over medium heat (greased with butter). Let the pancake cook for 2-3 minutes on each side.
5. Serve with a generous dollop of butter and lots of maple syrup : )

- double shot espresso
- 1 cup milk
- 2 oz dark chocolate
for the caramel (actually butterscotch):
- 1 cup brown sugar
- 1/2 cup butter
- 1/2 cup cream
- flakey salt
for the whipped cream:
- 1/2 cup cream
- 1 tbsp sugar
- vanilla paste
1. Make the caramel sauce: brown the butter in a large saucepan. melt in the brown sugar then whisk in the cream. let this boil for 2-3 minutes and finish with some flaky salt. Set aside to cool.
2. Make the whipped cream by whipping together all of the ingredients until it reaches soft peaks.
4. Pull espresso shot over caramel and chocolate.
5. Steam the milk and pour over the espresso.
6. Top the coffee with whipped cream, caramel sauce, dusting of cocoa powder!

for the dough:
- 2 1/2 cups flour
- 2 tbsp sugar
- 1 cup salted butter, chilled and cubed
- 1/4 to 1/2 cup ice water
for the jam:
- 16 oz strawberries
- 3 tbsp honey
- squeeze of lemon juice
for the frosting:
- 1 cup powdered sugar
- 2 tbsp milk
- 1 tbsp corn syrup
- vanilla
1. Make the pie dough: Rub together the flour, sugar, and butter until course. Add in the ice water bit-by-bit until it just comes together. Divide into 2, shape into rectangles, and refrigerate for 2 hours.
2. Make the jam: Blend together the ingredients and strain. Cook over medium heat for 20-25 mins until thickened, cool completely.
3. Roll out and cut your dough into rectangles - about 3.5 x 4.75. Place half onto the baking sheet. Dock other half of them with fork.
4. Add about a tbsp of filling onto the bottom piece, spreading thin. Brush the edge with egg wash. Place top piece over and crimp the edges with a fork.
5. Brush with egg wash and bake at 350 for 25-30 mins.
6. Mix together the frosting, and ice once completely cooled. Top with sprinkles : )

- 1 sheet of puff pastry
- 1 apple
- 2 tbsp brown sugar
- 4 tbsp melted butter
1. Cut the apple in half and slice each into into thin strips.
2. Place the halves onto the puff pastries and cut out the apple shapes using a knife.
3. Mix together 4 tbsp butter and 2 tbsp brown sugar and brush over the apple slices.
4. Bake for 20 mins at 375 and enjoy!
