French Fries 2nd Best Method:
1. cut fries and rinse 3 times in cold water before soaking for 1 hour in cold water
2. dry fries and then blanch for 5-7 minutes in 4 quarts of water with 1 tbsp salt and 2 tbsp white vinegar
3. strain fries and let steam for 2 minutes before spreading out on a sheet pan and letting them cool down to room temp.
4. place them on a sheet pan and pour over a generous amount of hot neutral oil (350 f, 176 c) before placing in a 400 f (205 c) oven.
5. bake for 15 minutes before removing and tossing, place fries back in the oven and bake for a additional 15-20 minutes. (if using convection oven times will be much shorter)
6. drain on paper towel and immediately season before serving.
