We’re in Chongqing, China where you’ll find some of the spiciest and most mouth numbing Chinese food in China. Our mission today is to find and cook a dish called La Zi Ji which is the Sichuan version of spicy mala fried chicken. This particular dish is famous at Sichuan restaurants across the world and this version originates in a village within Chongqing, China.
We got lucky to be able to see the entire recipe using a whole chicken, chopping it up, frying it, and then frying it again with tons of dried chilies, Sichuan pepper, and sesame seeds. The result was an extreme amount of flavor - one of the best versions of Chinese chili fried chicken I’ve ever had and one of the best plates of la zi ji.
