Wet-Aged Brisket on the Tahoma Auto Feed Charcoal Smoker

TOTAL SERVINGS: 15

PREP TIME: 4 months wet age

COOK TIME: 16 Hrs (12-14 hr cook time + 2 hr hold)

Ingredients:

12-15 lb brisket

Your favorite rub



The Cook:

Leave brisket in sealed cryovac bag in refrigerator for 30-45 days

Season brisket with your favorite rub

Smoke at 225 degrees overnight for 9-10 hours

Wrap briskets in foil and continue cooking in the smoker (or oven) at 300 degrees for an additional 2-4 hours until the briskets probe tender and temp at around 203 degrees internal

Rest for 2 hrs on counter

Slice and serve
