The koftas are made using different vegetables such as bottle guard, cauliflower, cabbage, jackfruit etc. In this recipe I have made kofta using soya nuggets and potatoes. This recipe video provides a step by step process of making soya kofta curry, I have also provided tips to enhance the texture and taste of the curry.

* Boiled Potato - 2 medium size
* Garlic - 4 to 6
* Ginger - 1 inch
* Green Chilli - 2
* Onion - 1 medium size
* Chopped Coriander Leaves - 2 tbsp
* Turmeric Powder - 1/4 TSP
* Red Chilli Powder - 1/4 TSP
* Coriander Powder - 1/2 TSP
* Cumin Powder - 1/2 TSP
* Garam Masala - 1/2 TSP
* Salt - 3/4 TSP
* Chickpea Flour (Besan) - 3 to 4 tbsp
* Oil for frying
For Kofta Curry:
* Onion - 3 medium size
* Garlic - 8 to 10
* Ginger - 2 inch
* Green Chilli - 2
* Tomato - 1 medium size
* Oil - 1/4 cup
* Cumin Seeds - 1/2 TSP
* Bay Leaf - 2
* Dry Red Chilli - 2
* Cinnamon - 1 inch
* Black Cardamom - 1
* Green Cardamom - 2
* Clove - 2
* Turmeric Powder - 1/2 TSP
* Red Chilli Powder - 1 TSP
* Coriander Powder - 1 TSP
* Cumin Powder - 1 TSP
* Kashmiri Red Chilli Powder - 1 TSP
* Water - 2.5 cup
* Salt as per taste
* Garam Masala - 1/2 TSP
* Chopped Coriander Leaves
* Ginger Julienne
* Ghee - 1 TSP
