Ingredients (Diana Aw)
1. Prawn 8pcs
2. Red chilli 2pcs, remove seeds and cut smaller
3. Chilli padi 3pcs, cut smaller
4. Red onion 1pc, sliced
5. Ginger small piece, sliced
6. Garlic 3 cloves, halved
7. Tumeric small piece, sliced
8. Lemongrass 1 stalk, sliced
9. Curry leaves 2 stalks
10. Curry powder 1.5tbsp
11. Balacan 1tsp
Seasoning
1. Salt 1tsp
2. Sugar 5tsp
3. Fish sauce little
4. Coconut milk
Method
1. Blend ingredients 2-8 with little water till fine.
2. Combine curry powder and balacan in a bowl with little water. Mix well
3. Heat wok with more oil. Add in blended paste and stir fry till oil extracted and colour changed. Then add in curry powder paste and curry leaves. Continue to stir fry.
4. Add in salt and sugar and mix well. Then add 2 bowls of water and bring to boil. Turn to small heat and simmer
5. Heat a pot of water and blanch the prawns. Once boiled, transfer the prawn and put under running water before add onto the curry. Turn to high heat and cook for 1-2 min. Remove any impurities on the surface.
6. Transfer the prawns into the claypot and test the curry taste. Add fish sauce. Off heat and add coconut milk. Mix well. Pour the curry into the claypot.
7. Serve with mantou and enjoy! 💕
