Ingredients:
For the Base:
6 slices bacon, chopped
2 pounds (900g) potatoes, peeled and cut into chunks
1 head cabbage, roughly chopped
1 large onion, finely chopped
2 cloves garlic, minced
4 tablespoons (60g) butter, divided
½ cup (120ml) milk or cream
3 green onions, finely chopped
Salt and pepper, to taste
2 cups (200g) shredded cheddar cheese (or any strong, mature cheese of your choice)
For the Topping:
1 sleeve Ritz crackers, crushed (about 32 crackers)
½ cup panko breadcrumbs (for extra crunch)
4 tablespoons butter, melted
Extra cheese for topping
For the peels
potato peels
little oil
salt
Bake 180 until crispy
For the Onion gravy
onions sliced
water
pinch of salt
sugar
gravy granules or powder
Oven: Bake at 360°F (180°C) for 15-20 minutes or until golden brown and bubbling.
