Irish Stew - a warming and hearty stew for the cold winter months. Originally, Irish stew would be made from mutton and whatever root vegetables were available, including potatoes, of course. You can't have Irish Stew without potatoes in it. Mutton is almost impossible to get these days. so we have to use lamb. You could use beef instead, and maybe add some Guinness, but then you can't call it Irish Stew, which is all about the lamb.
