This recipe has three delicious layers: A classic vanilla panna cotta with optional cardamom 😋, a layer of berry gelatin (we recommend a mix of berries like cranberry and raspberry)... and of course a layer of silky fresh mango! 😍.

✨ INGREDIENTS ✨ (for 3-6, depending on your glass size)
Here, we use 300 ml glass cups. You can use a smaller size for more portions :)
MANGO LAYER:
✅ Mango Puree: 250 ml (about 1 mango)
✅ Heavy Cream: 150 ml
✅ Gelatin: 4 g
✅ Water (for blooming the gelatin): about 2 tbsp
✅ Honey: 40 g or to taste
✅ Lemon Juice: just a squeeze to prevent oxidation and add acidity
PANNA COTTA:
✅ Heavy Cream: 500 ml
✅ Honey: 30 g
✅ Granulated Sugar: 30 g
✅ Vanilla: 1 tsp of extract o 1 whole bean
✅ Gelatin: 4 g
✅ Water (for blooming the gelatin): about 2 tbsp
✅ Cardamom: 5-6 whole seeds (optional, but highly recommended! Mango + Cardamom = Yum!)
BERRY LAYER:
Produces 150 ml of filtered berries
✅ Berries (here, a mix of raspberry and cranberries): 300 g; frozen ok too!
✅ Granulated Sugar: 100 g
✅ Heavy Cream: 50 ml
✅ Lemon Juice: 3 tsp or to taste
✅ Gelatin: 2 g (or 1 g of agar-agar)
MANGO TOPPING (DECORATION:
✅ a mango diced
✅ Simple Syrup (optional): 50 g (50 ml)
✅ Gelatin: 1 g
✅ Water (for blooming the gelatin): about 2 tbsp
✨ TIPS ✨
✨ Always taste for sugar and honey. Every culture and person has their own preferred level of sweetness and you don't want to be disappointed :)
✨ Use smaller glasses (such as 150 ml glasses) or even silicone molds for more portions. With silicone molds you will be limited to horizontal layers.
