There is a pure magic hidden in the swirls of jangri. The swirls made while piping the jangri in the oil is an art of cooking but can be perfected by seeing this video.. There is always a confusion between Jalebi and Jaangri. The basic ingredient for Jalebi is Maida (All purpose flour) and for Jaangri is Urad dal (white lentils).
Jaaangris are easy to make when the basic tactics are known which is clearly explained in this video.
In my childhood days I used to admire the magic in my aunt's hand when she swirls those jaangris in oil.. Cooking is all about admiring the small small things that takes place while preparing a dish.
Ingredients:
Basic:
For batter:
Urad dal (white)– 250 gms
(approx. 20 medium sized jangris)
Orange colour – a pinch
Rice flour or corn flour– 1 tablespoon (optional)
Salt – 1 teaspoon (optional)
For sugar syrup:
Sugar –750 gms (3:1, sugar:urad dal)
Water– till the sugar gets immersed
Rose essence – 1 teaspoon
Orange colour – a pinch (optional)
For Frying:
Refined oil- ¼ th of the pan used for frying.
