This time we filmed Sakaiya, located near Kusatsu Port in Hiroshima Prefecture. It is a kamaboko and tempura company that has been in business for over 100 years. I asked to interview Sakaiya because I enjoyed their tempura so much that I had eaten when I went to an oyster festival. (When I was researching Sakaiya, I was surprised to find that they were the manufacturer of my favorite bakudan-gansu.)
They want people to enjoy delicious kamaboko just as they used to eat it. With this in mind, they carry on their long history of techniques using fresh local fish in a handmade production process.

今回撮影させていただいたのは、広島県の草津港近くにある坂井屋さん。
明治創業の蒲鉾、天ぷらの会社です。
牡蠣祭りに行った時に食べた坂井屋さんの天ぷらがとても美味しくて、取材をお願いしました。。
（坂井屋さんを調べていたら大好きなバクダンガンスの製造会社で驚きました。）
昔食べていたような美味しい蒲鉾を食べてもらいたい。
そんな思いで製造工程をできるだけ手作りにこだわったり、地魚の落とし身を使ったり長い歴史の技術を継承されています。
