► Jerk Marinade
6 scotch bonnet peppers (for less heat, use fewer peppers)
1/2 brown onion
6 cloves of garlic
4 green onions
1 tbsp fresh ginger
1.5 tbsp fresh thyme
1 tbsp all spice
1 tsp cinnamon (optional)
1/2 tsp nutmeg
2 tsp black pepper
3 cloves (optional)
2 tsp salt
1 tbsp dark brown sugar
2 tbsp dark soy sauce
2 limes
1/4 cup fresh orange juice (optional)
1/4 cup vegetable oil
►Rice & Peas
2 cups basmati rice soaked in water 30 min
2 cups water
5 tbsp oil
Half onion
3 garlic cloves
Some ginger
3 green onions
1 scotch bonnet
Thyme twig
Few bay leaves
1 tsp all spice
1 tsp back pepper
1/2 tsp white pepper
2 tsp jerk seasoning
2 tsp salt
Can of red beans
1 cup coconut milk
Lemon zest
50g salted butter
►Sauce
1/2 cup natural yogurt
Jerk marinade as required
1 tsp smoked paprika
1/2 tsp sumac
2 tsp parsley
