Beef Kacchi Biriyani
Step 1: Making Kacchi Masala:
Cinnamon – 2 (Medium)
Cardamom – 12 to 13
Clove – 4 to 5
Nutmeg – 1 (Medium)
Mace – 2 (Medium)
Caraway Seeds (Shahi Jeera) – 1.5 Tbsp
White Pepper – 1 Tbsp
Step 2: Potato Fry for Kacchi
Potato – 750 Gram
Salt to taste
Sugar – 1.5 Tbsp (You can add more)
Food Color – ¼ Tsp
Step 3: Making Liquid Mix
Powder Milk – ½ Cup
Lukewarm Water – 1 Cup
Saffron – ¼ tsp
Clarified Butter (Ghee) – ½ Cup
Kewra Water – 2 Tbsp (as per taste)
Rose Water – 2 Tbsp (as per taste)
Meat Marination:
Beef – 2 Kg
Ginger Paste – 3 Tbsp
Garlic Paste – 1.5 Tbsp
Yogurt – 1 Cup
Chili Powder – 1.5 Tbsp (as per taste)
Almond Paste – 2 Tbsp
Raw Papaya Paste with skin – 1 Tsp
Salt – 2 Tbsp (to taste)
Kacchi Masala – 3 Tbsp (Approx)
Fried Onion – 1 Cup
Fried Onion Oil – 1 Cup
Liquid Mixture – 1 Cup
Rice Preparation:
Basmati Rice – 1 kg
Cinnamon Stick – 2 to 3
Bay Leaves – 2 to 3
Cardamom – 6 to 8
Caraway Seeds (Shahi Jeera) – ½ Tbsp
Salt – 3 Tbsp (as per taste)
Other Ingredients:
Green Chili – 8 to 10
Raisins (one third cup)
Plum (one third cup)
Sugar (one third cup)
Fried Onion (one third cup)
Powder Milk (one third cup)
Almond Slices (one third cup)
** মাংসের পরিমাণ, মাংসের ধরণ (meat quality), চুলার আচ আর ভালো ভাবে দম পাওয়ার (proper sealing) উপর নির্ভর করে কাচ্চি রান্নার সময় কম বেশি হতে পারে।
