Kathiyawadi Thali Recipe – A Spicy & Flavourful Gujarati Feast! 🔥

Kathiyawadi Thali (Serves 4-5)
🕒 Prep Time: 15 mins | Cook Time: 2 hrs
Kathiyawadi Kadhi
Ingredients:
Base: Buttermilk (1L), Besan (¼ cup), Salt (1 tsp), Turmeric (1 tsp), Sugar (1 tsp)
Tadka: Ghee (1 tbsp), Mustard seeds (1 tsp), Jeera (1 tsp), Methi seeds (½ tsp), Hing (½ tsp), Cloves (4-5), Cinnamon (½"), Dry red chilli (1), Garlic (1 tbsp), Ginger (1 tsp), Green chilli (1 tsp), Curry leaves (8-10)
Method:
Mix buttermilk, besan, salt, turmeric, and sugar. Cook on low heat until thick.
Heat ghee, add tadka ingredients, sauté, and mix into kadhi.
Methi Ringan Nu Shaak
Ingredients:
Main: Ghee (1 tsp), Methi leaves (1 bunch), Oil (1 tbsp), Mustard seeds (1 tsp), Jeera (1 tsp), Curry leaves (9-10), Green chilli (1 tsp), Hing (½ tsp), Ginger (1 tsp), Besan (1 tbsp), Turmeric (1 tsp), Brinjal (7-8), Salt (1 tsp), Tomato puree (½ cup), Jaggery (1 tsp)
Spices: Garlic chutney (1 tbsp), Coriander powder (1 tsp), Kitchen king masala (½ tsp)
Garlic Chutney:
Grind garlic (15-20 cloves), salt (½ tsp), red chilli powder (1 tsp).
Method:
Sauté methi in ghee. Set aside.
Heat oil, add mustard, jeera, curry leaves, hing, green chilli, and ginger.
Add besan, turmeric, brinjal, and salt. Cook until soft.
Mix garlic chutney, masalas, tomato puree, and cook till oil separates.
Add jaggery and sautéed methi, mix well.
Vaghareli Khichdi
Ingredients:
Base: Rice (1 cup), Yellow moong dal (¼ cup), Split moong dal (¼ cup), Tur dal (¼ cup), Green peas (½ cup), Carrot (1 cup), Cauliflower (1½ cup), Turmeric (½ tsp), Salt (1 tsp), Peanuts (¼ cup), Water (as needed)
Tadka: Ghee (1 tbsp), Oil (1 tbsp), Cloves (4-5), Cinnamon (½"), Black pepper (8-10), Dry red chilli (1), Curry leaves (5-6), Onion (1, chopped), Garlic chutney (1 tbsp), Tomato (1, chopped), Turmeric (½ tsp), Red chilli powder (1 tsp), Coriander powder (½ tsp), Kitchen king masala (½ tsp), Water (as needed), Curd (½ cup)
Method:
Soak rice & dals for 30 mins, pressure cook with veggies, salt & peanuts.
Heat ghee, add tadka ingredients, sauté onions, garlic chutney, tomatoes, & spices.
Stir in curd, adjust water, and simmer. Mix with khichdi.
Bajra Rotla
Ingredients:
Bajra flour (1 cup), Wheat flour (½ cup), Warm water, Ghee (1 tbsp)
Method:
Knead flours with water & ghee into a soft dough.
Shape into rotis & cook on tawa until golden brown.
Apply ghee before serving.
Sambario & Fried Mirchi
Sambario:
Grated raw papaya (1), Red chilli powder (1 tsp), Salt (½ tsp), Coriander powder (1 tbsp), Jeera powder (½ tsp), Garam masala (¼ tsp), Turmeric (½ tsp), Chopped coriander (1 tbsp), Lemon juice (½)
Fried Mirchi:
Bhavnagri chillies (3-4), Salt (pinch)
Method:
Mix sambario ingredients well.
Slit & lightly salt chillies, shallow fry until soft.
Masala Buttermilk
Ingredients:
Curd (1 cup), Salt (1 tsp), Jeera powder (½ tsp), Water (as needed), Chopped coriander (1 tsp)
Method:
Whisk curd, mix all ingredients, serve chilled.
