Kheema Unde or Kheema Balls curry is another specialty of Solapur. Kheema Unde has its roots back in western Karnataka but it’s one of the prime delicacies in the Saavji style, saoji or the khandeshi of making mutton and many non-vegetarian dishes. Saavji meat recipes have a great cult following across urban and rural Maharashtra.
There will be many styles of making the Kheema balls curry but this one was a gift to me by my mother-in-law who hailed from Solapur and the recipe dates back in the 1970s. It's amazing to see how traditions have been kept alive in Maharashtra and you could hardly see variation or deviations in the traditional cooking styles or Recipes.

२ चमचे आले लसूण पेस्ट
एक चमचा हळद
दोन चमचे काळा मसाला
दोन चमचे लाल तिखट
१ चमचा मीठ
सर्व मसाले खिम्यात छान पणे मिसळून घेणे
आता खिम्याचे छोटे छोटे गोळे करावे
कढईत २ मोठे चमचे तेल टाकणे
एक कांदा बारीक चिरून घ्यावा
बारीक चिरलेला कांदा तेलावर चांगला परतवून घेणे
कांदा लालसर झाला आहे
आता तीन ते चार कप गरम पाणी टाकणे
पाण्याला उकळी अली कि त्यात उंडे सोडावे
खिमा उंडे १० ते १५ मिनिटे शिजवून घ्यावे
आपण आता वाटण तयार करूयात
२ कांदे लांब चिरून घ्यावे
लांब कांदा तळून घेणे
किसलेले ओले खोबरे
