Keto Cornbread
4 tbsp pork panko
4 tsp coconut flour
2 tsp baking powder
2 tbsp almond flour
2 eggs (room temperature)
2 oz cream cheese
2 oz butter
Preheat oven to 350
Mix pork pank, almond flour, baking powder, and coconut flour together well.
In a separate bowl
Mix softened butter and cream cheese together until they form a creamy texture
Add cream mixture to eggs and mix well.
Add to dry ingredients and mix well.
Grease cast iron skillet liberally with bacon grease.
Pour in cornbread mixture and place in preheated over for 25 minutes,
Allow to cool and then serve with your favorite keto soup. Try this chili recipe by my good friend Melissa and her husband Jared.
