In this video, I’m showing you how to make my Keto Cottage Cheese Danish, a delicious, low-carb treat with a creamy, protein-packed filling. This recipe cuts down on time but doesn’t skimp on flavor. Plus, it’s super versatile — you can add sugar-free chocolate, berries, or your favorite keto-friendly toppings!
Ingredients:
Dough:
2 cups Almond flour
¼ cup Coconut flour
1 tablespoon Psyllium husk powder
1 teaspoon Baking powder
1 ½ cups Mozzarella cheese (shredded and melted)
2 large Eggs
2 tablespoons Allulose or Erythritol (optional, for sweetness)
1 teaspoon Vanilla extract
1 egg for Egg wash (beaten)
Filling:
½ cup Cottage cheese (blended smooth)
2 oz Cream cheese (softened)
1-2 tablespoons Allulose or Erythritol (adjust to taste)
½ teaspoon Vanilla extract
Optional:
Sugar-free chocolate chips, berries, or cinnamon for topping
Instructions: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Make the dough: Melt the mozzarella cheese, then mix with almond flour, coconut flour, psyllium husk, baking powder, eggs, sweetener, and vanilla extract. Knead until smooth.
Shape the pastries: Divide the dough into portions, flatten them into rounds, and press a small indent in the center.
Prepare the filling: Blend cottage cheese and cream cheese until smooth. Stir in the sweetener and vanilla extract.
Fill and bake: Spoon the filling into each pastry, brush the edges with egg wash, and bake for 15-18 minutes until golden brown.
Optional toppings: Drizzle with sugar-free glaze or top with berries or chocolate chips for an extra treat!
