Cottage Cheese Keto Savory Waffles
Ingredients:
1 cup cottage cheese (full-fat)
1 cup almond flour
2 large eggs
1/4 cup grated Parmesan cheese
1/4 cup shredded cheddar cheese
2 tablespoons chopped fresh chives
1 teaspoon baking powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons coconut flour (for better binding)
1/4 teaspoon xanthan gum (optional, for additional binding)
Butter or cooking spray (for the waffle iron)
Optional Toppings:
Sliced avocado (1/4 medium avocado per waffle)
Grilled chicken (3 oz per waffle)
Sour cream (2 tbsp per waffle)
Fresh herbs (parsley, dill, or cilantro)
Instructions:
Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions.
Blend the Cottage Cheese: In a blender or food processor, blend the cottage cheese until smooth.
Prepare the Batter: In a large mixing bowl, combine the blended cottage cheese, eggs, almond flour, Parmesan cheese, shredded cheddar cheese, chives, baking powder, garlic powder, onion powder, salt, pepper, coconut flour, and xanthan gum (if using). Mix until well combined.
Rest the Batter: Let the batter rest for 5-10 minutes to thicken.
Grease the Waffle Iron: Lightly grease the waffle iron with butter or cooking spray to prevent sticking.
Cook the Waffles: Pour a portion of the batter onto the preheated waffle iron. Close the lid and cook until the waffles are golden brown and crispy, about 3-5 minutes, depending on your waffle iron.
