For another Keto dessert choice, why not try this pound cake? Made with almond flour, cream cheese and sour cream, this dessert is sure to impress. Adding the cream cheese and sour cream made this cake very moist and tasty. Not only that, each slice has only 3.5g carbs and 256 calories.
Ingredients
For Pound Cake
115g (4 oz) Cream Cheese (full fat, softened)
56g (4 tbsp) Unsalted Butter (room temperature)
1/2 cup White Sugar Sweetener granulated
1tsp Almond Extract (Optional - vanilla extract could be an alternative)
4 Eggs (large, I used 70g eggs)
62.5g (1/4 cup) Full Fat Sour Cream
200g (2 cups) Almond Flour
2 tsp Baking Powder
For Cream Cheese Glaze/Icing
50g Cream Cheese softened
20 g (1/3 cup) Sugar Sweetener powdered
1tsp butter softened
Water
Preheat oven to 350F/175C
Grease a small 6-8 cup Bundt Cake Tin. (I used coconut spray to grease the pan).
In a mixer, add cream cheese, butter and sugar and beat until well combined. Add the almond extract and beat until combined. Then add eggs one at a time and sour cream and continue beating until combined.
Add the flour and baking powder to the wet ingredients and continue beating until well combined.
Poor batter into Bundt tin and bake for 35-40 minutes or until toothpick comes out clean. Let cool in bund tin for 10 minutes. Then remove and place on cooling rack until cool to the touch.
You can start on the cream cheese glaze/icing. Combine all of the ingredients together and add water to get it to the consistency needed. I added two tbsp water and think I still could have added more to make the glaze thinner. Add to the cake.
Makes10 slices, at 256 calories and 3.5g per slice. (You could easily cut into 12 slices, which would reduce the calories and the carbs pr slice).
