My friend Jenn makes the best blackberry cobbler!! I am going to attempt to make a lower carb/keto version of her cobbler...


2 1/2 cups blackberries (I used a variety because they were all ripe)
1 1/4 cups monk fruit sugar divided https://amzn.to/4arcoRZ
1 cup almond flour https://amzn.to/4az62jM
2 teaspoons baking powder
1 cup almond milk or heavy whipping cream
1/2 cup melted butter- 1 stick

Mix 1 cup monk fruit sugar and berries together and set aside 10-20 minutes.
Mix rest of the monkfruit sugar (1/4 cup) into the almond flour.
Add almond milk and butter.
Put berries and sugar into the pan, spread evenly.
Pour batter over berries making sure it is spread evenly.
Bake at 375* for 45-50 minutes.
You can buy the disposable 6x6 inch round pans at the dollar tree if desired. They work great and no hassle clean up!!
