Keto Roti (Almond flour and Coconut flour) Ingredients for Coconut flour roti Coconut Flour: 75 gms (3/4 cup) Psylluim husk powder: 1.5 tbsp (15gms) Salt : a pinch Water : 1 cup + 2tbsp Ingredients for Almond flour roti Almond Flour: 100 gms. (1 cup Almonds) Ghee: 1tbsp Salt: a pinch Water: 1tbsp Method for Coconut flour roti Step 1: Put ¾ cup coconut flour, a pinch of salt and 1.5 tbsp of psyllium husk in a mixing bowl and add 1 cup + 2 tbsp of water little by little and mix well. This will look like batter but as the flour soaks up all the water it will be like dough. Keep dough aside for 15 mins. to rest. Step 2: After 15 mins, knead the dough once again and divide into 4 portions. Take 2 peices of parchment paper. Place the portion of dough on one paper cover it with another piece of parchment paper and roll out a roti, to make it circular in shape make use a round cutter. Alternatively you may use tortilla press to get round shape roti. Step 3: Heat a non stick tava on medium flame, place the roti on the tava for 1 to 1.5 mins. Once bubbles are formed on the roti, turn it over to other side. Press the roti well to cook evenly on both sides. Gluten free soft rotis are ready to be served with any vegetable dish or they can be used for burrito or veg rolls. Method for Almond flour roti Step 1: Put 1 cup (100gms) almond flour, a pinch of salt and 1 tbsp of ghee in a mixing bowl and add 1 tbsp of water little by little and mix well. Step 2: Make 2 portions of the dough. Take 2 pieces of parchment paper. Place the portion of dough on one paper cover it with another piece of parchment paper and roll out a roti, to make it circular in shape make use a round cutter. Alternatively you may use tortilla press to get round shape roti. Step 3: Heat a non stick tava on medium flame, place the roti on the tava for 1 to 1.5 mins. Once bubbles are formed on the roti, turn it over to other side. Press the roti well to cook evenly on both sides. Remove the roti carefully from the tava, this roti may break when folded as pysllium husk is not added. This crispy roti tastes well with any vegetable gravy or curry. In you desire soft rotis kindly add psyllium husk powder. Enjoy this low carb, gluten free rotis high on taste and best for the waist.
