Rajasthani Khoba Roti
Ingredients :
1 cup Wheat Flour (Gehu ka Atta)
Salt as per taste
1/2 tsp Crushed Fennel Seeds (Saunf)
1/2 tsp Carrom Seeds (Ajwain)
2 tsp Ghee
Water (as required)
Ghee
For Garlic Chutney:-
15-20 Garlic Cloves
2-3 soaked Red Chillies
2 tsp Kashmiri Chilli Powder
2 tsp Coriander Seeds Powder
1/2 tsp Turmeric Powder
Salt to taste
1/4 cup Water
3 tbs Oil
1 tsp Cumin Seeds (Jeera)
Pinch of Asafoetida Powder (Hing)
Method :
In a mixing bowl, take 1 cup Wheat Flour (Gehu ka Atta)
Add Salt as per taste
Add 1/2 tsp Crushed Fennel Seeds (Saunf)
Add 1/2 tsp Carrom Seeds (Ajwain)
Add 2 tsp Ghee
Add Water gradually and start kneading dough
Rest the dough for half an hour
Roll out few balls from the dough prepared
Dust some dry flour on rolling board
Flatten with the help of rolling pin
(thickness of roti should be as aloo paratha)
Place the roti on hot pan
Flip it and make cuts on roti with the help of knife
Flip again and keep the heat slow
Make design by making pinches on the roti
Flip the roti and cook it on medium heat
Again flip it and cook it on direct gas flame
Roast both the sides well
Drizzle some ghee and cook it on the pan for a while
Further to make Garlic Chutney, take 15-20 Garlic Cloves
Add 2-3 soaked Red Chillies
Coarsely pound with the help of mortar pestle
Add 2 tsp Kashmiri Chilli Powder
Add 2 tsp Coriander Seeds Powder
Add 1/2 tsp Turmeric Powder
Add Salt to taste
Add 1/4 cup Water and mix it
Heat 3 tbs Oil in a pan
Add 1 tsp Cumin Seeds and a pinch of Asafoetida Powder
Add pound garlic paste, fry well and turn off the heat
Squeeze a Lemon and mix it
(If you want to store this chutney use amchur powder instead)
