Mutton Lonche
INGREDIENTS:
1 kg mutton
2 tbsp of ginger-garlic and fresh coriander paste
3/4 tsp of turmeric powder
Salt to taste
1 litre of water
1/2 dry grated coconut
2 tbsp of sesame seeds
2 tbsp of poppy seeds on a shut flame
1 cup of oil
5-6 green chillies
1 tbsp of ginger-garlic-coriander paste
2 tbsp kanda-lasun masala
3/4 tsp of turmeric powder
2 tbsp of chilli powder
Half a lemon juice
Fresh Coriander leaves
METHOD:
Take 1 kg mutton
Add 2 tbsp of ginger-garlic and fresh coriander paste
3/4 tsp of turmeric powder
Salt to taste
Mix it well and massage it well
Add it to a pressure cooker
Add 1 litre of water
Pressure cook it on a high flame for 1 whistle and 3 whistles on a low flame
After releasing the pressure, remove the mutton in a bowl and stock separately for further use
For Masala
Heat a kadhai
Roast 1/2 dry grated coconut and roast it till golden-brown in colour
Add 1 tbsp oil to make it crisp
Remove it in a bowl and keep it aside
In a same kadhai,
Roast 2 tbsp of sesame seeds
Add 1 tsp of oil and roast till the colour changes to golden-brown
In a the same pan, lightly roast 2 tbsp of poppy seeds on a shut flame
Remove it
Heat a cup of oil
Add the boiled mutton pieces and fry it
Fry the mutton till is turns brown in colour
Add 5-6 green chillies
Add 1 tbsp of ginger-garlic-coriander paste
Add 2 tbsp kanda-lasun masala
3/4 tsp of turmeric powder
2 tbsp of chilli powder
Salt to taste
Mix well
Add the roasted coconut, sesame seeds and poppy seeds
Shut the flame after 5 minutes of cooking on a low flame
Drizzle half a lemon juice
Sprinkle some coriander leaves
Serve
