Kumquats are tiny oranges and due to the unique taste can be eaten whole. Therefore this fruit is widely used in making preserves.
Today I want to show you how to make it perfect.
In making preserves you need to weight your fruit and use the same amount of sugar.
I have :
2 lbs Kumquats
2 lbs sugar
1¼ cup water
Method:
Wash your Kumquats.
Make 4 holes in each fruit with toothpick.
Place in the pot and pour boiling water over.
Boil first time for 15 minutes.
Drain and discard water.
Return fruit to a pot.
Boil second time for 10 minutes.
Repeat the process.
Boil third time 5 minutes.
Set aside to drain.
To make syrup:
In a saute pan add sugar and water, mix well.
Bring to a boil and boil for 5 minutes or until syrup becomes clear and all sugar has dissolved,
Add juice of one lime and mix.
Add Kumquats to a syrup and boil for 15 minutes.
Take off the heat and let cool for 1 hour.
Boil again for 15 minutes.
Your preserves is ready!
Pour it into jars and place in the refrigerator.
Enjoy with tea!
