Kutsinta is a steamed rice cake found throughout the Philippines. It is made from a mixture of tapioca flour and all purpose flour or rice flour, dark brown sugar, lye water, and annatto extract or powder. This process is steamed in small ramekins. Authentic kutsinta is topped with grated coconut or niyog in the Philippines. Kutsinta has a jelly-like, chewy consistency. It's an all time favorites of my fellow Filipinos.
