Sharing today my Lauki ka Halwa Recipe made with Instant mawa (khoya).
Now you do not need to cook milk for hours to make the homemade mawa, it will be made in 5 minutes only. This 5 minute Instant mawa will be made with milk powder, ghee and milk. It is pure, unadulterated and safe to be used during the fasts also. This instant mawa can also be used to make barfi or gula jamun or it fact, any sweet that you make with Mawa.
The lauki ka halwa is one of those traditional Navratri Recipes that is enjoyed by all.
Lauki or doodhi or ghiya as it is also known, is one of those few vegetables that are consumed while one is fasting and so, the lauki ka halwa is especially enjoyed during the fasts.

Recipe :
Lauki ka Halwa
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Serves: 3-4
Ingredients:
600g Lauki/ doodhi/ghiya/bottle gourd
½ cup milk
½ cup sugar
2 tbsp chironji
10-12 cashew nuts
10-12 almonds
2 tbsp raisins
2 tbsp ghee
½ cup mawa/ khoya
Method:
Peel the lauki and grate it. Remove the seeds, if any.
Heat ½ cup milk in a pan. add the grated lauki and cook over medium heat till the lauki is tender and the milk almost evaporated.
Heat 1 tsp ghee and lightly fry the dry fruits. Remove.
Now add in the remaining ghee to the lauki and saute till the lauki turns fragant. Add the sugar and mix well. Allow some of the syrup to evaporate and then add in the khoya.
Mis well. Add in the fried dry fruits and mix. Serve.
Instant Mawa
Preparation Time: 2 minutes
Cooking Time: 5 minutes
Ingredients:
1 cup milk powder
2 tbsp ghee
½ cup milk
Method:
Heat the ghee in a pan. Add the ghee and mix well. Add the milk powder and mix well. Cook over medium heat till the mixture starts coming togete5r like a ball and leaves the sides of the pan. remove from heat. Cool and use as required.
