Full written recipe - Lauki Kofta Curry

Ingredients:
Kofte
BOTTLE GOURD | लौकी 500 GRAMS
SALT | नमक A LARGE PINCH
GINGER GARLIC GREEN CHILLI PASTE | अदरक लहसुन हरी मिर्च की पेस्ट 1 TBSP
CORIANDER POWDER | धनिया पाउडर 2 TSP
DRY MANGO POWDER | आमचूर पाउडर 1 TSP
TURMERIC POWDER | हल्दी पाउडर 1/2 TSP
RED CHILLI POWDER | लाल मिर्च पाउडर 1 TSP
GARAM MASALA | गरम मसाला A PINCH
CUMIN SEEDS | जीरा A PINCH
SALT | नमक TO TASTE
BLACK PEPPER | काली मिर्च 1/2 TSP (FRESHLY CRUSHED)
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
MINT | पुदीना A HANDFUL (CHOPPED)
GRAM FLOUR | बेसन 2 TBSP
BAKING SODA | बेकिंग सोडा A PINCH
Curry
TOMATO | टमाटर 3 MEDIUM SIZED (ROUGHLY CHOPPED)
CASHEW | काजू 10 NOS. (BOILED)
GHEE | घी 2 TBSP
OIL | तेल 1 TSP
CUMIN SEEDS | जीरा 1/2 TSP
CINNAMON | दालचीनी 1 INCH
BAY LEAF | तेज पत्ता 1 NO.
GREEN CARDAMOM | हरी इलायची 3 PODS
ASAFOETIDA | हींग 1/2 TSP
ONION | प्याज़ 2 MEDIUM SIZED. (CHOPPED)
GINGER GARLIC PASTE | अदरक लहसुन की पेस्ट 2 TBSP
GREEN CHILLI | हरी मिर्च 2 NOS. (CHOPPED)
TURMERIC POWDER | हल्दी पाउडर 1/2 TSP
KASHMIRI RED CHILL POWDED | कश्मीरी लाल मिर्च पाउडर 1 TBSP
SPICY RED CHILL POWDER | तीखी लाल मिर्च पाउडर 1 TSP
CORIANDER POWDER | धनिया पाउडर 1 TBSP
DRY MANGO POWDER | आमचूर पाउडर 1 TSP
HOT WATER | गरम मसाला A SPLASH
SALT | नमक TO TASTE
HOT WATER | गरम पानी AS REQUIRED
SUGAR | शक्कर 1 TSP
ROASTED KASURI METHI POWDER | कसूरी मेथी पाउडर A LARGE PINCH
GARAM MASALA | गरम मसाला A PINCH
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
Method:
Wash & peel the bottle gourd, then divide it into smaller pieces & grate it using a large hole grater. Try getting a smaller sized bottle gourd, you don't want the seeds to be very large inside otherwise you will need to cut the core out.
Add the grated lauki onto a muslin cloth, add a pinch of salt, mix & let it rest for a few minutes.
Next, squeeze out the excess moisture from the lauki, make sure you don't make it completely dry, it needs a very little amount of moisture.
Before making the kofta mixture, set a kadhai with oil over medium flame, so by the time you shape the kofta the oil will get hot.
Add the lauki into a bowl & add all the ingredients of the kofte, mix well & gently mash using your hands, the mixture should be very slightly loose but should still bind into balls.
If the mixture is very moist then you can a more besan, and if it becomes to dry then you can add splashes of water.
Once the mixture is ready, shape it into medium sized koftas.
Once the oil is moderately hot, 150°C, carefully drop the shaped koftas into the oil, let them fry for 2-3 minutes before stirring. Once they hold their structure, stir & fry them slowly over medium low flame until golden brown. If you fry them over high flame the koftas will remain raw from the inside.
Once fried, transfer them into a sieve & set them aside until you make the gravy, fry them in batches.
Add the tomatoes & cashews into a mixer jar & blend into a fine puree.
Set a heavy bottomes vessel over high flame, add ghee & oil, let it get hot. Then add all the whole spices & cook them for a few seconds.
Add onions, stir well & cook over medium high flame until they turn light golden brown.
Next, add the ginger garlic paste along with green chillies, stir & continue to cook further until the onions turn completely golden brown.
Then lower the flame & add all the powdered spices along with a splash of hot water, stir & cook over high flame for 2-3 minutes.
Once the oil separates, add the prepared tomato & cashew puree along with salt, stir well, cover & cook the gravy over low flame for 12-15 minutes. Open the lid & stirr the gravy at regular intervals, add hot water & continue to cook further if the gravy gets too dry.
Once the gravy is cooked, add hot water to adjust the consistency of the gravy, keep it slightly thin.
Taste & adjust salt if required & add sugar, kasuri methi powder & garam masala.
Add the prepared kofte along with some coriander & cook the koftas in the gravy briefly.
Our delicious, lauki ke kofte as ready, serve them with tandoori roti, chapati or any bread of your choice.
