Low Net Carb Bamboo Fiber Soft Pretzels Recipe – Keto, Low Carb And Gluten Free
Full Recipe
2 large eggs
185g coconut milk (or any milk)
1tsp (3-4g) inulin
8g (2tsp) dried active yeast
50g shredded mozzarella cheese
30g melted unsalted butter
80g bamboo fiber
20g whole psyllium husk
1 tsp salt
1 tbsp sweetener
coarse salt or mozzarella cheese

Steps:
Place 2 large eggs in warm water to warm up to room temperature.
Heat 185g of coconut milk (or any milk) until just warm (not hot).
Add 1 tsp (3-4g) of inulin (artichoke) and
8g (2tsp) of dried active yeast, mix them and leave for 5-10 min to begin fermenting before use.
Measure 50g of shredded mozzarella
then melt 30g of unsalted butter.
Measure the dry ingredients:
80g of bamboo fiber,
20g of whole psyllium husk,
Or if you have premixed bamboo baking flour, use 100g of it (80g of bamboo fiber + 20g of ground whole psyllium husk).
1 tbsp (12g) of sweetener (stevia erythritol),
1 tsp of fine salt.
Mix them thoroughly.
Add the other ingredients:
shedded mozzarella,
melted butter,
2 eggs,
and the fermented yeast.
Mix them thoroughly with an electric mixer until the dough is elastic. (a few minutes).
Place the dough onto a silicone mat and roll lightly with your hands for a few seconds (use a silicone sheet as the dough is actually sticky).
Cut the dough for 6 pieces.
Roll each dough into a long 18 inch rope on a lightly floured (bamboo fiber) surface.
Twist the ends together and bring the twisted ends back down towards yourself and press them down to form a pretzel shape.
Then place them onto a baking sheet.
Rise for about 15 minutes on a warm place:
Preheat oven to 170F (70C) then put the bread inside the oven and let rise.
Using a pastry brush, brush egg wash on top and around the sides of each piece.
Then sprinkle with coarse salt or shedded mozzarella.
(If you sprinkle the pretzels with mozzarella, bake them on the bottom rack.)
Then place the dough back in the oven, now turn the oven up to 370F (185C) and bake it at 370F (185C) for 20 minutes then turn the oven up to 410F (210C) to get the desired color (for a few minutes).
Keep in mind that all ovens and pans are different, even if they look the same or very similar. The baking time in my recipes is as accurate as it can be, but it might take you more or less time.
After baking place the hot pretzels onto a cooling rack and
let it cool slightly.
