Now on to my Pulihora Recipe: For 1 Kg boiled rice: 2 table spoons Oil 2 small glasses Nuvvulu (Sesame Seeds) 1 spoon Menthulu (Dill Seeds) 1 and 1/2 spoons Jeelakarra (Cumin Seeds) 2 spoons Miriyalu (Pepper corns) 1 small glass Chenaga Pappu (Bengal/Yellow gram) 1 small glass Minapa Pappu (Urad dal) 1 table spoon Dhaniyalu (Coriander Seeds) 10-20 Red Chillies 250 gms Chinthapandu (Tamarind) Peanuts (as required) A pinch of Hinge (Inguva) A pinch of turmeric (Pasupu) Salt (As per taste) Jaggery (Optional) For Tadka (Thalimpu): Green Chillies Mustard seeds (Aavaalu) Curry leaves Preparation: Take a small pan and dry fry Sesame seeds separately and keep aside. Fry peanuts in oil till red and keep them aside. Take oil in a large pan and heat it, Add Menthulu, Jeela karra, Miriyalu, Chenaga Pappu, Minapa Pappu, Dhaniyalu, Red Chillies and fry them till red. Once cooled grind the mixture into a fine powder. Take 250 gms of tamarind, soak in water. Place a large pan and boil the soaked tamarind pulp, add a pinch of mustard and hinge. Now add the ground mixture in to the boiling tamarind pulp. Add salt as required. Mix and boil till the oil separates. In a separate pan, put tadka with all the items and add the tadka to the tamarind mixture. Add fried peanuts. Mix well. Put some tadka aside for mixing in the rice. Add jaggery if needed. Take the boiled rice in a large bowl, add the remaining tadka. Add salt as required. Add the tamarind mixture and Mix well.
