RECIPE MEASUREMENTS:
1 box of macaroni
2 cups of milk (I used evaporated milk)
1 cup of heavy cream or buttermilk
1/2 stick of cream cheese
1/2 stick of butter
1 small onion
1 bell pepper (I used a quarter of different colors)
1 tablespoon of garlic pepper paste or 2 cloves of fresh garlic
1 tablespoon of flour
1 teaspoon of mustard
1 tablespoon of Cajun seasoning
1/8 tablespoon of salt
1 teaspoon of black pepper
1 egg
6 oz of Monterey Jack cheese
6 oz of Cracker Barrel extra sharp
6 oz of Gouda cheese yellow cheese
3 oz of Parmesan
DIRECTIONS:
To a pot of boiling water, add 2 tablespoons of salt.
then, add macaroni
boil until halfway cooked, drained,
and add cold water, chopped onions, and bell peppers
Grate cheeses, or cut some into cubes.
In a pan, start preparing the base or (béchamel)
Add butter, then onions
let them cook a little then add the garlic pepper paste.
Then, add bell peppers
Add flour to follow keep stirring while adding the milk.
Add the cream cheese,
Add whipped cream
Start adding the cheese, (remember to leave off the Parmesan and a hand full of the others to top it off)
Keep stirring until the cheeses completely melt,
Taste, if needed add salt.
To a big bowl add the macaroni,
Add the mustard,
The Cajun seasoning,
The egg
Then stir
Then combine the two
To a greased pan, add the mix and bake it for 45 minutes at 375 degrees.
