This is my favorite vegetable salad and I really like it because you can serve it with almost anything as a side or as the way it is. Super simple and healthy, you will love it too!
Ingredients:
1 large english cucumber
2 large ripe tomatoes
1/2 cut onion
For the dressing:
juice of 1 whole lemon or 1/4cup (you can substitute with apple cider vinegar or red wine vinegar)
3tbsp virgin olive oil
1tsp salt
1/2tsp freshly ground black pepper
