You will need....
for the gingerbread:
75g water (75mls)
245g soft brown sugar (270mls)
50g golden syrup (40mls)
1 tablespoon mixed spice powder(15mls)
2 tablespoons ginger powder (30mls)
250g butter (250mls)
1 teaspoon baking soda (5mls)
560g flour (1075mls)
1 egg
for the royal icing:
±500g sifted icing sugar
2 egg whites
red gel food colouring
green gel food colouring
silver balls
desiccated coconut
** depends on exactly how consistently thick you roll out the gingerbread, it might be safer to make a double batch of the gingerbread dough
